Abstract

In today's globalized agrifood system (GAS), quality is the focus of competition. It is reshaping the social and economic relations in production, processing, distribution and consumption of food, and becoming a barrier to entry for producers who are unable to stay or to rise to the quality standards imposed by corporations that dominate their niche market. The purpose of this article is to analyze the challenges and opportunities of artisanal food production, in the light of theories of regulation and conventions.
