The aim of this study was to determine the factors that determine the consumption of chicken meat in the Metropolitan Area of Valley of Mexico (MAVM), which is the main center of marketing and consumption of all kinds of food. The methodology was qualitative regression models (logit and probit) with a sample of 440 consumers. The results showed that the significant variables in the consumption of chicken meat are the number of members per household, meat preference, income, illnesses or causes of non-consumption and price. As limitations we can point that the higher marginal impact on the purchase decision variables have the preference of meat and price. In conclusion, chicken meat is the most preferred by the consumer of the MAVM, due to factors such as the number of members per household, income and price meat.
