Abstract

The objective of this paper was to determine the physical and chemical properties of avocado oil from dehydrated pastes by means of microwave energy and those dehydrated by an electric oven. Results show that the oil obtained from microwave treated avocado meets physical and chemical specifications. Infrared spectra of this oil do not show band at 2133 cm−1 due to a triple bond, that is shown with the oil extracted of pastes dehydrated by electric oven and with a commercial avocado oil.
