Abstract

Agricultural foodstuffs bearing the international recognition of Denomination of Origin (DO) are the object of complex interconnection between the inclusion and exclusion processes of producers, regions and countries. This essay revises the historical dynamics of construction pertaining to DOs. It captures the dialectical intertwining of material, cultural and power processes which inform and make up their commercial and symbolic value. It illustrates the role that States play in the incorporation of their DO products into the global market and shows how their sovereignty seems to shatter for it is multilateral instances of commercial negotiation which legitimate DOs.
