This work presents the study realized in order to obtain chitosan from shrimp shells thrown out at seafood restaurants. The chemical method was used which basically consists of three steps: the deprotenisation, the demineralisation and the deacetylation, of the shells done dust. The characterization of the obtained material was realized by infrared spectroscopy, potentiometer valuation and the Kjeldahl method. In addition, the ash, humidity and insolvable matter percentage was obtained. Results show that the obtained chitosan is of similar quality than that found in the market.
