Abstract

This article approaches the institutional programs implemented in local contexts, as well as the collective action for food development with territorial anchoring, from the perspective of Localized Agrifood Systems (SIAL). The case of a pilot program used for the production of cuitlacoche (Ustílago maydis sp.) in the state of Tlaxcala, México, is analyzed, as well as two family microenterprises involved in the production of this fungus used in the human diet. It begins from the hypothesis that backing of entrepreneurial family agriculture and rural microenterprises devoted to the production of food linked to the territory can consolidate SIALs. It is concluded that this can be possible with the condition that an institutional mesh of the three levels of government and the collective action in the territory be coordinated.
