Abstract

In the demand analysis for carcass pork in Mexico (1990-2019), a multiple linear regression model was used. The dependent variable was the demand for carcass pork and as predetermined, the real prices for carcass pork, beef, chicken, tortilla, and the per capita gross domestic product. The demand for carcass pork was inelastic in relation to its determinants: the price elasticity for pork meat was -0.38, for beef (0.17), chicken (0.49), tortilla (-0.43) and the income was 0.11. Concluding that in the referred period, the real prices of pork meat, chicken, and tortilla, had a greater influence on the demand.
