Abstract

The Mexican hacienda was an institution that prevailed for more than 400 years in the political, economic and social life of our country. This article takes as object of study the Hacienda de Ciénega de Dolores, located in the municipality of Jerez, Zacatecas; it is intended to make maximum estimates of wheat production during the Porfirian era; by considering the territorial extension of the property and delimit its productive sectors under three main aspects: soil use, hydraulic structure and storage capacity from the archaeological landscape. In order to reach the approximations, archaeological techniques were used such as the surface survey, recording and description of the hydraulic systems, analysis of current architectural spaces, in complement with oral sources and historical records.
