Abstract

The intercultural educational process of the consumption of foods that make up the Milpa Diet is analyzed with the changes in the perceptions, knowledge, and practices of Mexican people with diabetes, hypertension, and overweight. The work is based on socio-constructivist epistemology and the theory of the zone of proximal development. It has a quantitative-qualitative case study design of people with chronic diseases from five states of Mexico, who agree to participate. Knowledge, perceptions, and practices regarding the Milpa Diet are evaluated. The habitual diet of the patients at the beginning is compared, and with the diet after the educational intervention, carried out in virtual workshops for three months. It is verified that the promotion of the Milpa Diet supported by the process of virtual intercultural education generates contributions in the treatment of the diseases studied; the positive results are based on the planning of an intervention with an inclusive vision. From the educational perspective, it provides elements to develop a disruptive pedagogy with virtual learning means to carry out intercultural health education.
