The new potato cultivar "Bayonera" is suitable for fresh consumption and for fried food industry, it was developed at Sierra de Arteaga Research Station of INIFAP from a cross between "Ieri" and "USA-4" in 1991. This new cultivar has a growth cycle from 90 to 100 days to harvest, 30 days earlier than cv Alpha and similar to cv Atlantic. Bayonera has cream color, smooth type tuber with medium deep buds; the pulp has also cream color with 16 to 18% of soluble solids and from 95 to 100% colored chips. Bayonera has excellent quality for fresh and fried food market and has shown high yields at Sierra de Arteaga, Coahuila, Valle de Navidad, Nuevo León and León, Guanajuato, Mexico.
