Strains of fungi which produce ochratoxins were isolated in green coffee (Coffea arabica) which was stored for seven months in three warehouses from a coffee-growing region of Mexico. The same time the OTA content was determined using the immunoaffinity method. The values found initially (after two months storage) fluctuated between 1.2 to 7.7 ppb and then did not vary significantly after the following five months. While these values have not increased to levels not permitted during storage due to natural conditions of humidity and temperature characteristics of the study region; 100% of strains of Aspergillus niger were found to potentially produce these mycotoxins under uncontrolled conditions of temperature and humidity. For this reason, this document presents the quantificationTM ochratoxin A in green coffee with Ocratest, with an assessment of the ability of OTA production by native strains of Aspergillus in three coffee industries different in Mexico.
