Resumen

MARTIREN, Juan L.  y  MOYANO, Daniel. The Evolution of Food Markets in Argentina: An Analysis on the Commercialization of Flour between Santa Fe and the Northern Markets (1880-1895). Am. Lat. Hist. Econ [online]. 2019, vol.26, n.1, e935. ISSN 2007-3496.  https://doi.org/10.18232/alhe.935.

This paper studies the development of flour supply chains between Santa Fe and the Northern markets in Argentina. It aims to provide new evidence to explain the emergence of integrated domestic consumer good markets in the country during the late 19th century. Based on archives from two privately owned Santa Fe wheat mills and trade information published in Tucuman’s newspapers, we analyze the commercial links between both markets by showing the functioning dynamics of the intermediaries, their connections, the effects on prices and the product differentiation and customer strategies. We argue that intermediaries played a central role in the dominance of the Santa Fe flour producers in the Northern markets.
