In this article the technological limitations in the production of Bacanora are analyzed in comparison to the provisions of NOM-168-SCFI-2005. The purpose is to provide an overview of the traditional production process of this liquor and identify innovative technological alternatives that add competitive conditions in the global market. Thus, it is assumed that the similarity of bacanora industry with the industries of Oaxaca's mezcal and Jalisco's tequila, would provide this industry technological adaptations and marketing strategies successfully applied in those industries.
