An experimental methodology is presented to obtain linear models that predict the speed of color change using the ripening process of cherry tomato (Solanum lycopersicum L) as a model. It was observed that the green-yellow-red color change only depended on the red and green components in their digital image, and that both components were linearly correlated with time, while the blue component remained constant. Digital images and their histograms are presented that demonstrate the behavior of variability of the components during a period of fifteen days. Based on the linear models obtained, a color change rate of thirteen and seven pixels per day was estimated for the red and green components, respectively.
