Mushroom production in Chiapas is an activity that takes place in rural and pilot modules and uses agricultural waste as a raw material for food production. The aim of this study was to analyze the value chain of “setas” (Pleurotus spp.), to identify technical, social, environmental and economic factors to establish successful, competitive, sustainable modules. Research were conducted in Suchiapa, San Cristobal de las Casas, Comitan Tenejapa and Chiapas through semi-structured interviews, lectures, documentary information, key informants and tours to production units. Results include the identified three links: production, marketing and consumption, and mapping integration and connection of actors of the value chain. The most important limitations are the limited availability of substrate, genetic material and commercial inoculum.
