The objective of this study was to evaluate the sensory, nutritional and sanitary quality of milk from cows fed on fermented fed based on poultry litters. Treatments were: T1, fermented feed based on poultry litter (AFBP) and T2 (control), unfermented feed based on grain (ASFBG). Ten cows were assessed a Latin rectangle randomized cross over design. Both treatments were tested in all cows in two periods of time. Each period lasted 30 d. Analysis of nutritional composition and sanitary quality of raw milk were carried out. For sensory analysis, two discriminative tests (triangular and duo-trio) and a Quantitative Descriptive Analysis (QDA) were used, milk was pasteurized before analysis. The sanitary quality of milk in both treatments was within the range allowed by Mexican Official Standards. For the two treatments; no significant differences (p > 0.05) were found either for the nutritional composition of milk or the sensory quality. A sensory perceptible difference (p < 0.05) was only found for the triangle test in the second period. It was concluded that the AFBP can be used in the supplement of dual purpose cows without causing unpleasant effects on the milk.
