Beef is an important food for human nutrition and good functioning of the organism. The Metropolitan Area of the Valley of México is the principal center of commercialization and consumation of this food in the country. The objective of the present study was to carry out a characterization of the consumer of in the Metropolitan Area of the Valley of Mexico to know the type of products that are demanded, associating variables such as income level, consumption level and integrated services, among others. The methodology employed was the CHAID algorithm (Chi-squared Automatic Interaction Detection) and tests of association by means of the X2 distribution, segmenting the quantitative and categorical variables of economic and social level. The information was obtained by means of a semi-structured survey, applied to 440 individuals. To analyze the information, tables of contingency and relative frequencies were used. The analysis of the results shows that income and consumption are positively correlated (19.5 %) with the types of meat cuts and freshness; furthermore, a weak positive correlation was found (10.7 %) with the type of sales outlet and type of packaging of the product. It is concluded that consumers with middle and low incomes (37.2 %) demand popular cuts (steak, ground meat and remnant) which are purchased mainly in public markets.
