DELGADO, Gian Carlo. Nanotecnología y producción de alimentos: impactos económicos, sociales y ambientales. Estud. soc [online]. 2009, vol.17, n.34, pp.185-205. ISSN 0188-4557.
The capacity of manipulating matter at a nanometric scale for specific purposes, or what it is called nanotechnology, seems to be, along with biotechnology, electroinformatics, and cognitive sciences, one of the key technological fields of the XXI Century. The big promises, on one side, and the considerable degree of uncertainty of nanotechnology, on the other, are a couple of elements that seem to distinguish the 'nano wave'. Considering the mentioned above, this paper reviews the social-discursive context of nanotechnology development in the area of food and food processing. It offers an appraisal of the economic and social expected impacts of nanotechnology for the food industry, as well as for its possible environmental and health implications.
