Jumbo squid fishery is an important economic activity in the Northwest region of Mexico. Although jumbo squid is mainly exported, in recent years its national market has increased. This article presents a comparative analysis of tastes and preferences regarding the consumption of jumbo squid at the regional level. Surveys in six cities in Northwest Mexico were applied in 2004 and 2006. Results show an increase in the consumption of jumbo squid, as well as an increase in frequency and quantity of consumed product.A greater disposition for jumbo squid consumption was found, representing a diet alternative due to its nutritional characteristics and accessible price.
