Objective: to build a theoretical contextualization of the certificate of origin regarding the State of Mexico’s mezcal within the framework of social control in organizations, the role of actors (internal and external), and the benefits received by producers of agave and mezcal. Method: a mixed exploratory study was based on documentary review, participatory observation, and the application of 134 questionnaires to voluntary producers. Results: The uncertainty facing the appellation of origin in the State of Mexico makes up a scenario pervaded by a conflict of interest. The interconnection among producers has not been altered, but the interdependence among actors at a micro-level has improvement opportunities. Limitations: the study transversality. Value: progress is made in the understanding of the appellation of origin in State of Mexico and facilitators and barriers to certification are made visible. Conclusions: addressing the theoretical contextualization from the theory of organizations’ social control facilitated the situational and temporal phenomenon micro and macro-analysis prior to the authorization of use of appellation of origin in the State of Mexico.
